Caramel

Caramel
2 c. sugar
2 c. whipping cream
1 tsp. vanilla
1 3/4 c karo syrup
1 c. butter

Cook sugar, syrup, butter, and 1/2 of cream until boiling. Add remaining cream and cook on medium heat, stirring constantly until it reaches a softball stage (240 degrees, on a candy thermometer). Take off heat, add vanilla. Then pour into buttered 9x12 glass cake pan. Let cool for 20 minutes, then spoon out onto pieces of waxed paper and roll up like candy.

This is a recipe my sister Mary and I found last year that we really liked. It's pretty easy as far as candy making is concerned plus it tastes great. It's one of the only sweets my husband will eat (he is super picky).
