French Bread Pizza

Let's face it, sometimes I just don't have time to make extravagant meals.  Between work, kids, school, church responsibilities, soccer, dance, and everything else we have going on, sometimes I am just exhausted by the time I get home.  These are the nights I really need my "go to" meal.  You know, the meal you can put together in under 15 minutes.    I admit, I have several of these meals.  I usually keep the ingredients on hand for the times that we just need something to eat and fast.  This is one of our favorite "go-to" meals. 


French Bread Pizza

1 Loaf French Bread
1 jar favorite pizza sauce
Mozzarella Cheese
Pepperoni
(any other toppings you like)

Preheat oven to 425 degrees.  Cut loaf of bread in half lengthwise.  Place on cookie sheet, crust side down.  Spread sauce evenly over bread, top with cheese and pepperoni.  Bake in oven for 10-14 minutes or until cheese is melted and golden.

Oregano Rosemary Cherry Tomato Walnut Pizza

Oregano Rosemary Cherry Tomato Walnut Pizza
-Makes 4 servings

-1 tbsp vegetable or olive oil
-1 (12 inch) unseasoned prebaked pizza crust or make your own
-2 cups ( about half a 5-ounce bag) baby spinach
-1 pint cherry tomatoes, halved
-3/4 cup chopped walnuts
-1 1/2 tsp herbes de Provence*
-1/2 tsp salt
-freshly ground black pepper
-1 package (8oz) low-fat shredded mozzarella or Italian cheese blend

*herbes de Provence: Combine 1 teaspoon each dried rosemary, thyme, oregano, basil, sage and/or marjoram with 1/4 teaspoon dried lavender (found in spice shops and some supermarkets). Store, tightly covered, in cool, dark place.

Heat oven to 400 degrees or according to crust directions. Brush the oil on the pizza crust. Scatter the spinach on the crust then spread the halved tomatoes over the spinach then sprinkle the walnuts over the pizza. Season with the dried herb mix, salt and pepper to taste. Top with the shredded cheese. Bake according to the crust directions, 10-12 minutes, Remove, let cool for 5 minutes, slice, and enjoy.

Pizza

Pizza Crust
2 1/2 c flour
1 tsp salt
1 tsp sugar
1 TBSP active dry yeast
1 c. warm water
2 TBSP olive oil

Desolve yeast in water. Then pour over 2 c flour, salt, sugar, and oil. Mix well. Add a little more flour as needed. Roll out onto greased pizza stone. Then let rise for about 15 minutes. Poke with a fork and bake for 8 minutes at 425. (crust should still be white at this point). Then add your favorite toppings, and bake for another 15 minutes or until cheese is bubbly and crisp.

Barbeque Chicken Topping
2 boneless, skinless chicken breasts
1/4 c chopped onion
1/2 c. - 1 c. bbq sauce
1/4 c. water

Boil your chicken until done, then shred. Put shredded chicken and onion in a skillet with a little oil and fry for a few minutes until chicken starts to get golden brown, then add enough bbq sauce to just coat your chicken. Add water and simmer for a few minutes, then add a little more bbq sauce. You can add as much or as little as you want. Then put it on your pizza crust and top with cheese. Bake for 15 minutes.

My family loves pizza. We make it atleast once a week. We have found that we like homemade so much that we don't ever order out for pizza. It's quick and easy to make, and so much better than ordering out!! Hope you all enjoy!
