Baja Pork Tacos


Baja Pork Tacos
1 boneless pork roast (about 3 lbs)
3 cans (4 oz each) chopped green chillies
2 TBSP taco seasoning
1 TBSP cumin

Corn Tortillas
Shredded lettuce
Diced tomatoes
Sour Cream
Shredded Mozzarella cheese

Cut roast in half, place in slow cooker.  Pour in 1/2 c water (I have found that when cooking pork in the slow cooker it doesn't produce as much moisture as beef so I like to add a little water.) In a small bowl combine green chilies, taco seasoning, and cumin.   Pour over pork.  Cover and cook on low 6-8 hours.  Cook till pork is tender and pulls apart easily with a fork.  Once cooked, take the pork out and shred it, then put pack in slow cooker and mix with juices.  You can continue cooking on low for another hour if you want to soak up the juices.  (At this point I also added another 1 TBSP of taco seasoning just because I thought it needed it.)  Serve on warm corn tortillas with your favorite toppings.
