Blintzes

Blintzes:
9 eggs
1 c flour
1/4 c cornstarch
1/8 tsp salt
3 c milk

In a large bowl, beat eggs, add flour, cornstarch and salt.  Stir until smooth.  Stir in milk.  Heat a lightly greased skillet.  Pour 1/3 c batter into the center.  Lift and tilt pan to evenly coat bottom. Cook until the top appears dry - turn over and cook 15-20 seconds longer.  Place on plate.  Layer cool blintzes on a plate with wax paper in between layers. (6-8 servings)

Filling:
1 pkg cream cheese, softened
1 c powdered sugar

Beat together until smooth.

Fill blintzes with cream cheese filling and top with your favorite fruit, jam or whatever you like.

My kids loooooovvvveeee  crepes.  I do too but they are hard to make.  So I found this recipe for blintzes.  And we decided to have blintz buffet for dinner.  We had all of our toppings set out.  Cream cheese filling, strawberry jam, strawberries, bananas, syrup (my husband won't try them with anything else, he eats them just like a pancake) peanut butter, powdered sugar, and whipped cream. I also made some sausage to complete the meal.  It was a great hit at our house.
