No bake Cheesecake with strawberry topping


No Bake Cheesecake
2 (8oz) pkg cream cheese (room temp)
2 small cans sweetened condensed milk
2/3 c. lemon juice
2 c. whipped cream (like cool whip)
pie filling (optional)
Beat cream cheese until smooth. Slowly add sweetened condensed milk and beat well. Mix in lemon juice. Fold in whipped cream. Pour into pie pan lined with graham cracker crust. Top with pie filling. (optional) keep refrigerated and let set up. (makes about 2 cheesecakes)
Strawberry pie topping
2 cups strawberries
some water to thin out
2 T. corn starch
Sugar to taste
Put 1 1/2 c. strawberries into pot (they can be cut up or whole). Mush up the last 1/2 c. of strawberries to get juice out and add a little water so it's thinned out. (Add more strawberries or water, depending on how much gel you want with the strawberries.) Add thinned out mixture to pot with other strawberries, also add cornstarch and a little sugar. Mix together all ingredients with heat turned to Med-high. Continue to stir until the pink cloudy liquid becomes a red gel. Also add sugar to taste. Let cool then top cheesecake.
The cheesecake recipe is my mom's and it's a classic! So simple and yummy.
The strawberry topping is also my mothers recipe, one she told me the other day when she gave me a bag of strawberries from her garden. I was a little nervous to make it but it turned out pretty good. The strawberry topping thinly covered two cheesecakes so you can double the recipe if you like a lot of the pie topping.
