Island Pork and Coconut Rice

Island Pork
2lbs pork tenderloin
Seasoned with:
2 tsp salt
1/2 tsp pepper
1 tsp cumin
1 tsp chili powder
1 tsp cinnamon
Sear seasoned pork in 2 T. olive oil in frying pan.
Place in small baking dish with or Crock pot with:
1 c. packed brown sugar
2 T. chopped garlic
1 T. tabasco sauce
Bake @ 300* for 3-4 hours in oven OR in crock pot for about 3 hours on low.
Pull apart and serve with Coconut Rice.
Cook desired amount of rice. (white, brown, mixed, 5 minute, 20 minute, etc...)
Add 1 can coconut milk
Add 1/3 c. sugar (or more to taste)
Add a couple of Tablespoons of coconut cream(found by drink mixes) instead of milk and sugar.
Simmer for a while until coconut milk is absorbed.
Serve rice with Island Pork topped with fresh chopped mango's.
I got this recipe from Rachelle, a girl I dental assist with. She made it for our bosses birthday party a couple of months ago and I've been dying to re-make it but have been slacking in the kitchen creativity department lately. (Sorry!!!) Anyway she got it from one of her good friends and before that the origin is It's a very good, different, dish. The spices do make it, so be extra careful you don't add more than what is recommended!
