Island Pork and Coconut Rice


Island Pork
2lbs pork tenderloin
Seasoned with:
2 tsp salt
1/2 tsp pepper
1 tsp cumin
1 tsp chili powder
1 tsp cinnamon
Sear seasoned pork in 2 T. olive oil in frying pan.
Place in small baking dish with or Crock pot with:
1 c. packed brown sugar
2 T. chopped garlic
1 T. tabasco sauce
Bake @ 300* for 3-4 hours in oven OR in crock pot for about 3 hours on low.
Pull apart and serve with Coconut Rice.
COCONUT RICE
Cook desired amount of rice. (white, brown, mixed, 5 minute, 20 minute, etc...)
Add 1 can coconut milk
Add 1/3 c. sugar (or more to taste)
OR
Add a couple of Tablespoons of coconut cream(found by drink mixes) instead of milk and sugar.
Simmer for a while until coconut milk is absorbed.
Serve rice with Island Pork topped with fresh chopped mango's.
I got this recipe from Rachelle, a girl I dental assist with. She made it for our bosses birthday party a couple of months ago and I've been dying to re-make it but have been slacking in the kitchen creativity department lately. (Sorry!!!) Anyway she got it from one of her good friends and before that the origin is unknown...lol.. It's a very good, different, dish. The spices do make it, so be extra careful you don't add more than what is recommended!
