Southwestern Chicken Soup


1 onion
1/4 c. rice (not instant)
1 c. chicken ( we use a rotisserie)
1/2 c. cilantro
2-3 limes (quartered)
1 avocado
1 can great northern beans (drained)
6 c. chicken broth
1/2 c. tomato
3 garlic cloves
1 tsp. cumin
1/2 tsp. pepper
1/4 tsp. salt
Saute onion, garlic, and rice in a small amount of oil. Add broth, cumin and beans. Add chicken, cilantro, salt and pepper- simmer 15 minutes or until rice is cooked. Stir in tomato and avocado.
-Use juice from the limes to taste.
Our sister Lucy has been making this soup for a long time and it is soooo yummy! We finally got the recipe from her and made it on Halloween night. It is a quick soup but it tastes like it takes forever to make.
