Almond Joy Truffles

Almond Joy Truffles

1/8 tsp salt
1 c light corn syrup
1/3 c water
2/3 c sugar
1 (14 oz) pkg coconut flakes
1 1/2 TBSP flour

Combine salt, syrup, water and sugar.  Cook to a soft ball stage.  Stir only until sugar is dissolved.

Combine coconut and flour in a large bowl.  Pour syrup over coconut mix and spread onto a buttered cookie sheet. Let it sit till cool enough to handle.  Take about 1 TBSP of mixture and roll around an almond.  Let set on a cookie sheet covered with a piece of wax paper.  Let sit till cool.  (Do not refrigerate, as they become too hard to bite into).  Dip in chocolate and garnish with  an almond (I used almond slices) and serve. 

I've been going through some very old cookbooks lately.  This is just one of the recipes from an old family cookbook.  Love looking through the archives!!
