Black Bean & Chicken Enchiladas
Santa Fe Blend Creme - Philadelphia Cream Cheese
1/2 c chopped onion
2 diced tomatoes
1 can black beans - drained & rinsed
1 can chicken
1 1/2 c grated cheddar cheese
10 corn tortillas
Combine tomatoes, onion, chicken, beans & 1/2 c of cream cheese in a bowl. Spoon about 1/4 cup of mixture onto tortilla, add a little cheese then roll up and place in glass baking dish. Repeat till pan is full. Pour remaining creme cheese over rolled tortillas and cover with remaining cheese. Bake in oven at 375 for 30 minutes.
I was excited to find this recipe for a couple of different reasons. #1 I am looking for easier meals to make while my husband is gone because honestly when he's gone I'm basically a single parent and I barely have time to sleep. And #2 something my "little" kids would eat because they are completely too picky. This was a great recipe. Great flavor and super easy to make.
