Baked Spinach Dip Mini Bread Bowls


Baked Spinach Dip Mini Bread Bowls
1 can refrigerated pizza dough (or french bread)
2 T olive oil
2 c baby spinach, coarsely chopped
1 tsp minced garlic
3 oz softened cream cheese
1/2 c sour cream
2 T fresh shredded Parmesan cheese
1/8 tsp chili powder
1/8 tsp garlic powder
1/8 tsp salt
1/8 tsp pepper
1/3 c shredded mozzarella cheese

Preheat oven to 350 degrees.  Spray muffin tin with non stick cooking spray.  Cut pizza dough roll in slices, 12 per package.  Press each slice into about a 3 inch round, then press into each muffin cup, pressing across the bottom and up about 1/2 way on each side, making a small bowl.  Set aside.

Heat oil in medium skillet over medium heat.  Cook and stir spinach until wilted, about 3 minutes then add garlic stirring for another minute.  Then remove from heat.

Place cream cheese, sour cream, cooked spinach and garlic, Parmesan cheese, chili powder, garlic powder, salt, and pepper in medium bowl.  Stir until well combined.  Divide mixture evenly between each muffin cup, spoon a little bit of mixture only into the center of the cup.  Top evenly with shredded mozzarella cheese.  Bake for 15 minutes or until edges are golden and cheese is melted and crisp.  Remove from oven and let cool 3-5 minutes before removing from pan.

My daughter was invited to a little food party and she was asked to bring appetizers.  While searching around this is the one she picked.  It was super easy to make and they tasted delicious.  We actually doubled the recipe and it was perfect for a party.  (Original recipe found on Picky Palate)
