Quick Chicken Cordon Bleu


4 chicken breasts
2 tsp. dijon mustard
1/2 tsp. paprika
4 thin slices fully cooked ham (i just used lunch meat)
1 c. bread crumbs
1/4 c. parmesean cheese
1/4 tsp. pepper
1/4 c. mayo

Sauce
1 T. butter
1 T. flour
1 c. milk
1/4 tsp. salt
1/2 c. shredded swiss cheese
2 T. chicken broth

Flatten chicken to 1/2 in. thickness, spread mustard on one side; sprinkle with paprika. Top with ham slice. Roll up tightly; secure with toothpicks. In a bowl, combine bread crumbs, parm cheese, and pepper. Brush chicken with mayo; roll in crumb mixture. Place in a shallow 2 qt. microwave safe dish; cover loosly (i used plastic wrap). Microwave on high for 7 minutes. Turn chicken, cook 7 minutes longer or until juices run clear. Remove toothpicks, set aside and keep warm. In a 1 qt. microwave safe dish heat butter 30 seconds stir in flour till smooth. Cook, uncovered for 30 more seconds. Add milk and salt cook 3-4 minutes longer. Stir in cheese till smooth. Add broth. Serve over chicken.

This is a recipe I found a really long time ago in one of the homebaking magazines my mom always had. It was sent in by Shirley Jackson from Elkton Virginia. It really is so easy and quick to make and having the cheese as part of the sauce instead of melted inside really gives it a yummy flavoring-touch!

  1. So good! i thought it wouild be way weird just cuz it was made in the microwave and the cheese wasn't in it, it is inb the sauce, but it was actually really moist and the cheesy sauce is the best part:)
