Banana Muffins
1 3/4 c. flour
1/3 c sugar
2 tsp baking powder
1/4 tsp salt
1 egg beaten
3/4 c mashed banana
1/2 c milk
1/4 c cooking oil
Grease 12 muffin cups (do not use paper liners). Set aside. Mix flour, sugar, baking powder, and salt. Make a well in the center of dry mixture, set aside. In another mixing bowl combine egg, banana, milk, and oil. Pour into dry mixture and mix still just moistened (batter should be lumpy). Spoon batter into muffin tin, filling each 2/3 full. Bake in 400 oven for 15-20 minutes or until golden brown.
I had a couple of bananas that were turning brown on my counter and I really didn't have time to make banana bread so I made muffins for breakfast. It was pretty quick and so yummy.
