Donuts

Spudnuts
1/2 T yeast
1/8 c. warm water
1/2 c. scalded milk
1/8 c shortening
1/8 c. sugar
1/2 tsp salt
1/4 c mashed potatoes
1 egg, beaten
2-3 c. flour

Glaze
1/2 lb powdered sugar
3 T water
1/2 t vanilla

Dissolve yeast in water. Blend milk, shortening, sugar and salt in a bowl, then add mashed potatoes, egg, yeast mixture and flour. Mix together. Let rise until double. Then roll out and cut out donuts (and holes) let rise 20 minutes. Then fry in oil until golden. Drain, dip in glaze while still warm.

I love using this recipe when I have leftover mashed potatoes from Sunday dinner. It's really easy. It only makes about 1 dozen which is perfect for our little family.
