Italian Bread Bowls & Chicken Broccoli Soup



Bread Bowls
1 1/2 TB. yeast
2 1/2 c. warm water
2 tsp. salt
2 TB. vegetable oil
7 c. flour
1 TB. cornmeal
1 egg white
1 TB. water

In a large bowl, dissolve yeast in warm water. Let stand until creamy (about 15 min.) Add salt, oil, and 4 cups flour to the yeast mixture, beat well. Stir in remaining flour, 1/2 c. at a time, beating well with an electric mixer at medium speed after each addition until soft but not sticky dough is formed. (you might not need all 7 cups) Turn it out on a lightly floured surface and knead until smooth and elastic, about 6 mins. Lightly oil a large bowl, place dough in bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume (40 min). Punch dough down and divide 6-8 equal portions. Shape each portion into a round ball. Place loaves on lightly greased baking sheets sprinkled with cornmeal. Cover and let rise in a warm place, until doubled in bulk (35 min) Preheat oven to 400* . In a small bowl beat together egg white and 1 TB water; lightly brush the loaves with 1/2 of this egg wash. Bake in preheated oven for 15 minutes. Brush with remaining egg mixture and bake 10-15 minutes or until golden, cool on iron racks.


I have always wanted to make my own bread bowls so i looked and looked for a good recipe. I found this one at allrecipes.com and can I tell you, It is absolutely amazing! I'm not much of a bread maker because I hate waiting for it to rise but these are sooo worth it. ~ And just a little tip: when my bread rose it touched to towel I had laying on top and got stuck to it, so a good alternative is to just lay some plastic wrap sprayed with some cooking spray over it, that way you can see how it is rising and also it wont stick to anything.


Chicken and Broccoli Soup
1 can cream of chicken soup
1/2-1 1b boneless skinless chicken breast
1/2 a bag of frozen broccoli
1 c. grated cheddar cheese

Follow the directions on the can of soup but only heat it to medium-low for now. Cook the chicken however you like, (e.g. grill it, boil it, bake it....) and lightly season with salt and pepper. Cut into cubes and drop into pot with soup. put the frozen broccoli in with it, (You can you as much or as little as you would like). Turn up heat to Medium-High and let boil, stirring occasionally, until broccoli is cooked through. Ladle into bread bowls and top with some cheddar cheese.

I know this isn't much of a recipe, but just a regular can of soup wasn't hearty enough to go in my bread bowls so I just doctored it up a bit. You can do this with pretty much any soup:)
