Apple Cider Spice Doughnuts

Apple Cider Spice Doughnuts
1 c apple cider
1 c sugar
3 1/2 c flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 tsp pumpkin pie spice
1/4 c butter flavored shortening
2 eggs
1/2 c buttermilk

Spiced Sugar
3/4 c white sugar
1 Tbsp pumpkin pie spice

In a saucepan bring apple cider to a boil.  Continue to cook over high heat for 7-10 minutes until it's reduced to 1/4 c.  Remove from heat and let cool.  Combine shortening & sugar in a large bowl.  Mix 3 minutes.  Add 1 egg at a time, add cider & buttermilk.  In a separate bowl whisk flour, baking powder, baking soda, salt & pumpkin pie spice.  Add flour to liquid.

The dough will be very soft.  Lightly flour surface, roll out and cut.  Then fry in oil.  Let oil drip off for a minute, then roll doughnuts in spiced sugar. 

Enjoy them warm.
