Divinity

This recipe really needs two people to make it, at least at the end, and only if you are using a hand mixer. If you have a big mixer that mixes on it's own you are okay to make this on your own. But if you use a hand mixer like me, make sure when you make it you have an adult near by to help you and I say adult meaning someone who will be very careful and either hold the mixer or pour the HOT candy liquid into the bowl. Sounds complicated but it's well worth it! This was my favorite holiday candy growing up, my mom makes it the best, it takes some practice so hopefully in a few years mine will taste as good as my mom's :)
2 2/3 cup sugar
2/3 cup white corn syrup
2 egg whites
2/3 cup water
2 tsp vanilla (or other flavorings if you like)
nuts (optional)
Cook sugar, corn syrup and water to 260* or hard ball. Beat into stiffly beaten egg whites. Add vanilla and nuts and drop from spoon to waxed paper. (if you try to drop hot liquid it won't work so my trick is to fill the sink 1 inch with cool water and place the bowl in there while still mixing. Make sure you only keep it in there until the color changes and starts to stiffen up. If you leave in there to long the whole bowl will stiffen and you won't be able to drop onto waxed paper.)
Definitely play with the recipe, it's worth it once you've figured it out.
