Lemon Bar Cookies


Crust:
1 c. soft butter
dash of salt
1/2 c. powdered sugar
2 c. flour

Preheat oven to 350*. Combine all ingredients and mix well. (will be crumbly) Press Mixture in a 9 by 13in pan and bake 15 minutes or until nicely brown.

Filling:
4 eggs beaten
1/4 c. flour
2 c. sugar
6 T. Lemon Juice

Combine flour and sugar, mix in beaten egg and lemon juice; Pour over slightly cooled crust. Bake 25 minutes or until set. Cool and sprinkle with powdered sugar.

I have been making this recipe for years! It was created by someone named Donna Shorter, I have no idea how it came into my possesion and I have no idea why it's called a cookie but It's one of my favorites, so thank you Donna...whoever you may be. When I was younger my older sisters (Hannah and Mary) would bring their guy friends home and this dessert was always requested. So you know if the boys like it, it's definitely worth it:) I hope you enjoy!
